 Today’s Recipes: BLT Salad:Ingredients:
  • 4 cups of mixed lettuce (bib lettuce, gourmet lettuce)
  • 12 strips of bacon, cooked and crumbled
  • 2 cups of cherry tomatoes, halved
  • 1/2 cup of slaw salad dressing
  • Grated cheese (as desired)
Instructions:
  1. In a large bowl, combine the mixed lettuce.
  2. Add the halved cherry tomatoes to the lettuce.
  3. Gently toss the salad with the slaw salad dressing. Adjust the dressing amount to your preference.
  4. Top the salad with the crumbled bacon and grated cheese.
  5. Serve the BLT salad immediately as a delicious and refreshing side dish.
 Lettuce Soup:Ingredients:
  • 8 cups of lettuce (a mixture of arugula, green wrap lettuce, and gourmet lettuce)
  • 1 cup of peeled potatoes, cut into small pieces
  • 1 clove of garlic
  • 1 small onion
  • 1 teaspoon of salt (adjust to taste)
  • 1/4 teaspoon of pepper (adjust to taste)
  • 3/4 teaspoon of coriander
  • 3 cups of water
  • 1 tablespoon of butter
Instructions:
  1. Begin by sautéing the chopped garlic and onion in 1 tablespoon of butter until they become translucent.
  2. Add the salt, pepper, and coriander to the sautéed onion and garlic. Mix well.
  3. Stir in the peeled and chopped potatoes.
  4. Add 8 cups of mixed lettuce (arugula, green wrap lettuce, gourmet lettuce) to the pot.
  5. Pour in 3 cups of water and bring the mixture to a simmer.
  6. Allow the soup to simmer for about 10 minutes or until the potatoes are tender.
  7. Once the potatoes are tender, transfer the mixture to a blender and puree until smooth.
  8. Taste the soup and adjust the seasoning if necessary.
  9. Serve the lettuce soup hot, garnished with some additional lettuce leaves or herbs if desired.
