There are few places in the world that are as deadly serious as we Tuscans are when it comes to defending our traditions. While it is untrue that this land is nothing but an open-air museum, every little change causes enormous backlash by people that believe tradition to be absolutely paramount. Despite this, things change in Tuscany as well. Sometimes stuff disappears into thin air, grinded down by the relentless march of time. When it involves things that are near and dear to so many people, this becomes a bit weird. Take for example a special bread that was integral to the identity of Florence. In a few years we went from having people sell it on the street to be impossible to find. The story is both weird and interesting, which is why this week What's Up Tuscany will bring you back to the Tuscan capital to tell you the story of the "semelle", Florence's ghost bread.

If you listen to the full episode you will learn why this panino was so important for people living in downtown Florence, why the name sounds so weird, where it was really born and why it became almost impossible to find.
